Get Stuffed!

I recently dreamt up the idea of a spicy chorizo stuffed mushrooms, and just had to give it a try. I also wanted to add a bit of cream cheese and corn for texture and flavor. These mushrooms are great as an appetizer or to take to your next pot luck. You can increase the spice factor by adding diced jalapenos and sauteing with the chorizo mixture. Also, feel free to go BIG with this recipe, try it with portabella caps instead! Some fun facts about mushrooms: ~Modern studies suggest mushrooms can be useful for antibacterial, antioxidants and anti-inflammatory properties . While also helping to reduce blood pressure, moderate blood sugar, and reduce cholesterol.  ~The mushroom is a very nutritious food. Differing species can be a good source of vitamin B along with essential minerals such as copper and potassium.
